i HAVE BEEN THINKING ABOUT NATIVE AMERICANS

TONIGHT, I made another versian of polenta, italian corn meal..served in the form of a pie, a casserole, a side dish, a main dish...and eventually i will develope some that can be deserts....I am thinking of MARZIPAN POLENTA>>>anyway, the brand name on the BAG is INDIAN HEAD... That is the brand..and there is a drswing of a proud INDIAN CHief, with his eagle feathers stickin gup straight, as if they were dipped in Viagra.
For those of you who do know know it, I have always had great respect for NAtive American,,,,,even before I knew why, I was alwasy on there side. When My uncle Archy, used to hide from my AUnt BECKY, he would lock himself in a room and watch TV....COWBOYS and INDIANS... He was alwasy yelling and shouting and getting emotinally involved..SITTING at the edge of his chair.....well, i thought he was disturbed (anyone married to Aunt Becky would have to be disturbed, if not before marriage, then definatley after being married to her for 30 years....(at that time). I couldnt understand why they were always after the INDIANS...I looked at it..that the settlers stole the INDIAns land and wouldnt give it back..why shouldnt they attack the white folK?
They wre always being called savages, but eventually when I grew up and learned more about their beliefs...THE GREAT SPIRIT,....they asked for forgiveness for killing animals that they would eat, and use for survival. They only killed enough for what they needed. They conserved nature. They spopke to the souls of the animals that they hunted. They respected their women and children. They mostly were good spiritual people. Of course some tribes were more warlike than others.... and all of use have a dark side now and then.
Eventually, they most most of their land, to the US Government, the railroads....et all. THye were massacred, poinsoned and given blankets with smallpox germs in it to decimate their numbers. They were sold guns to kill each other, and given alcohol so they would become alcoholics.. They didnt understand genetics exactly, but the white man knew INDIANS were more pron to alcoholism than other groups.
Now on the reservation, they languish.. Once a PROUD NATION.......they suffered a true holocaust, by the hands of the UNITED STATES Government,, who claims to be a Democracy, with liberty and justice for all. What a load of crap. I am not AntiAmerican, but not proud of what we did to people. We literally used the CHINESE as slaves to build our railroads, We murdered most of our Native Americans, and hunted the boffalo to near extinction, we put Japanese American Citizens in concentration camps during the 2nd world war..and confiscated all of their property,we built the planations in the SOUTH on the backs of the balck men, who were slaves...had no freedom at all, and were treated worse than the barnyard animals..how many hundreds of thousands were litteraly worked to death? And later in the 1950s, black people were used in the south for experiments on Syphliss.....and we can go on to the presetn day....with DOnt ASK DONT TELL.....The freedom we talk about is very abstract....very, and non existence in many circles.
But lets get back to the INDIANS... Making polenta, I couldnt help think of the name of the brand of cornmeal I was ususingl.INDIAN HEAD... now what if it wasnt an INDIAN, but someone else. Lets say a JEWISH PErson... WOuld they CALL the corn meal JEW HEAD..and he owuld be wearing a cute little yarmulka and have side curls??? Or if it were a NEGRO, a black man or womans head and it might be called BLACK HEad, but that is the name we use for a pimple......If it were a CHINESE Person, would they call it CHINA HEAD, ...or JAP HEAD, or.......
If they had a BASEBALL time and didnt call it by an INDIAN NAME, if it might have been called the Washington YELLOW SKINS, or JEW SKINS, or BLOACK SKINS??? or the BOSTON JEW SOCKS, or Black or YELLOW SOCKS,....and in front of CIGAR STORES, instead of having a Hand carved INDIAN....they had a hand carved HASSIDIC with a black hat and blakc coat and sidecurls...holding a bunch of caigars...that would have been a hoot....
Back to the BASEBALL TEAm, INstead of the BRAVES....which if the team might have
been called the "Balabusters" (homemakers) or the BO)-vants (big muscular guys) or theCincinati Yentas........or the Cincinati HOMEBOYS.......etcetc

SPEAKING OF POLENTA.. made it a very different way tonight...too a big mixing bowl. addeda can of diced tomatoes and a can of hot water, a chopped onion, a little green scallion, garlic powder,salt pepper, chilli powder, a few teaspoons of Chipolite sauce....stirred. let sit for 5 min, then microwaved for about 15 min....took it out and it was nice and thick. added half a jar of parmigiana cheese...cooked it in the oven for 5 min more..then poured into a baking dish...poured salsa on top and baked it for 30 min......(I added some extra vergin olive oilbefore baking"
Then put it in the frigde after cooling.. To serve...well, you can slice it and heat it up, in micro wave, you can fry it... adding cheese and sauce later... You can put all different kinds of sauces..on it....try a white one , not only red....Try a Mexican mole sauce.....(with chocolate...in it ..its great)

You can serve it as a main course..with veggies and salad or as a side dish...
Polenta....is so versitile. You can add meat, fish, poultry, veggies... if you dont make it spicey you can add fruit(this is an invention I am working on) as a dessert.
